Emerald Pizza Academy, the first Irish professional pizza making school in Ireland.

Cookery School Emerald Pizza Academy is the first professional pizza making school in the country founded in August 2017 by Master Instructor Mihai Hogas. Passion for the art of pizza making and his determination to spread his knowledge to the next generation, both young and old, of pizza Chef’s . Master Instructor Mihai Hogas was initiated into this art in Italy by studying under some of the best Italian pizza chefs the world has to offer, spending large swathes of his life working on and mastering his skills in the birthplace of pizza and in 2014 was graduated as Master Instructor. Now he is dedicating his time to training new chefs in this art with a strong focus on the use of local, fresh ingredients.

Great pizza comes from within, each decision made in its conception either adding or detracting from the final product. From which flour to use, which tools to have on hand, or the manner in which it is baked, good quality is derived from good decisions and the knowledge necessary to make them. Our hope and dream is to ensure this knowledge is present in each and every one of our students by their time’s end with us.

Pizza is more than the sum of its parts, but we believe it’s only right to give each slice its best chance.
